Ah the joys of fall! I must admit I am a summer girl but we are just loving this weather-Nate in particular because its hunting season(boo). Well its been a somewhat busy week at the Kloeppel abode..Friday night Nate had a union meeting and then afterwards we went to his grandparents to play some good old poker (which neither of us won but that's ok gotta love us some texas hold-em!) Then Saturday we went to Nate's aunt Mary's 50th birthday party! We got to see lots of family& had a good time...when Sunday rolled around I was pooped but Nate got me motivated & we went to Eckert's & got us some apples to make some apple pie! Yum! Also I have been doing some serious thinking about gift ideas for our one yr anniversary which is just around the corner 10.10 so I think I came up with a great gift Nate will just LOVE-I gotta admit he was on the ball before I was about planning & gift shopping for the big 1 yr! We got a whole little wknd planned so I'm super stoked- oh & by the way since the weather has been nice & a little chilly I have been on a soup cooking frenzy-seriously I made 3 different soups in a week! Anyway if you like baked potato soup here is a great recipe I inherited from my mother-in-law...

Baked Potato Soup

4 large baking potatoes
2/3 cup butter or margarine
2/3 cup flour
6 cups milk
3/4 tsp salt
1/2 tsp pepper
4 green onions, chopped
12 slices bacon, cooked & crumbled
1 1/4 cups shredded cheddar cheese
1-8 oz carton sour cream
1 heaping tbs chicken base

Wash potatoes and prick several times with a fork. Bake in a preheated 400 oven for 1 hour or until done. Let cool. Cut potatoes into half inch cubes, leaving the skin on potatoes. Melt butter in heavy saucepan over low heat. Add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk. Cook over medium heat, stirring constantly, until mixture is thick and bubbly. Add potato cubes, salt, pepper, green onions, crumbled bacon, cheddar cheese, and chicken base. Cook until thoroughly heated. Stir in sour cream. Enjoy! (I made this with all fat-free, light, or skim products & it still was delicious)
